How Much Saffron Do You Actually Need? A Gram-by-Gram Guide

July 20, 2026Laith Abujaleel

Saffron is the only ingredient people buy without any idea how much they need. Nobody stands in front of the rice wondering how many kilos to get. But threads? Threads are a mystery.

Here is the plain answer.

The numbers that matter

  • 1 gram ≈ 450–500 threads
  • A pinch ≈ 15–20 threads ≈ 0.03g
  • A dish for 4 people ≈ 20–30 threads ≈ 0.05g
  • So 1 gram ≈ 15–20 dishes

That last line is the one to remember. One gram — a quantity that looks almost insultingly small in your hand — is somewhere between two and four weeks of regular cooking for most households.

Dosage by dish

Dish Serves Threads Approx. weight
Saffron rice / tahdig 4–6 25–30 0.06g
Paella 6 20–25 0.05g
Biryani 6 25–30 0.06g
Risotto alla milanese 4 20 0.04g
Saffron karak 1 glass 15 0.03g
Rice pudding / kheer 6 20 0.04g
Fish stew / zarzuela 4 15–20 0.04g
Bread or cake 1 loaf 20–25 0.05g

Notice the range is narrow. Almost everything lands between 15 and 30 threads. Saffron is not an ingredient you scale aggressively.

Why more is not better

Most spices have a wide comfort zone. Add more cumin, get more cumin.

Saffron does not behave that way. Past roughly double the correct amount, the honeyed floral notes drop away and what is left is bitter and faintly medicinal. The dish does not taste more of saffron. It tastes wrong.

This is genuinely good news. It means your saffron lasts far longer than you expect, and the expensive-looking price per gram works out to a few dirhams per meal.

Choosing your pack size

1g — the try-it pack Around 18 dishes. The right choice if you have never cooked with saffron before, or you want to give someone a small, considered gift. Also the smart way to test quality before committing.

10g — the household pack Around 180 dishes. If you cook saffron dishes once a week, this is roughly three years of supply — which is longer than saffron stays at its best, so it suits homes where saffron is a regular habit rather than an occasional one. Best value per gram at household scale.

25g and 50g — the serious cook and the gifting pack Around 450 and 900 dishes. This is the range for people who cook for extended family, host regularly, or run a small café or private kitchen. Also the natural gifting size in the Gulf, where a pack of saffron is a proper gift rather than a token.

100g and 250g — kitchen and trade Around 1,800 and 4,500 dishes. Restaurant, hotel, catering and food manufacturing territory. If you are buying at this scale, talk to us directly  our trade team handles specification, lead times and consistent supply.

The honest recommendation

Cooking saffron for the first time? Buy 1g. Cook three or four dishes with it. Find out whether you are a saffron household.

Already know you are? Buy 10g and stop thinking about it. The per-gram cost drops sharply, and you will use it before it fades if you store it properly.

Buying for someone else? 25g. It is enough to feel generous, small enough to feel precious, and it looks like exactly what it is.

Buying for a kitchen? Start at 100g and get in touch about supply.

One more thing

Whatever size you buy, store it right — airtight, dark, cool, dry, away from the stove. Saffron stored badly loses its aroma in months. Saffron stored well holds up for two to three years.

We wrote a full guide on that. Worth five minutes if you have just spent money on threads.
